The flour sacks were already stacked on the back step when I came in at half four, which was wrong, because I had stacked them myself the night before and Mr Pollard never sets foot in the bakery after dark. Frost furred the window. Out in the lane a long black car sat idling beside the pump house, its lamps off, its engine ticking like a clock someone had forgotten to wind.

The Vellacotts came in at five, before my first tray was out. Mrs Vellacott wore a black dress with a white collar and set a candelabra on my marble counter without asking, the candles already lit and dripping onto a spread of cobwebs she had brought wrapped in tissue paper. Her husband stood in the doorway with a red rose between his teeth. He wanted a tombstone cake for his wife's birthday, iced in grey, with RIP Vellacott piped across it in letters so neat I could have set type from them.

I told them the oven was not up to temperature. Mrs Vellacott smiled as though I had paid her a compliment and produced a small glass bottle with a skull on the stopper. She tipped a drop into the dough I had mixed the day before. 'It gives a lift,' she said. 'Nothing else in the county does.' The loaf rose in its tin so fast it pushed the lid off, and the smell that came out was clean rye and something older, like turned earth after rain.

By sunrise the car had gone and the candles had burned to nothing. On the counter lay a slice of cake cut in the shape of a spade, and beside it a card in copperplate: Friday, please, and early. I have never asked what needs digging. I have simply baked, kept the little bottle on my shelf, and been early every morning since.
