Three in the morning and the ovens are already breathing. Mr Okafor has finally let me shape the batch on my own, though he stands at my elbow with his arms folded like he's guarding the Nile. The two stone sphinxes you carried out of the Tivoli wall last spring are propped in the flour store now, one either side of the door, and every morning I swear the feathered wings have crept a little closer to the bread.

Do you remember what Dad said about them? That the wings were carved so the bakers would never run short of heat. He was daft, but I've started talking to them while I scale the dough. Yesterday I told the left one about the fire at the Co-op, and the right one just looked smug, the way you did when you beat me at cards.

Something happened this morning. The first tray came out crusted and sighing, and when I lifted the cloth off the proving baskets, every loaf had risen into a perfect dome, round as the arc of those wings. Mr Okafor said nothing. He just tore the heel off one, handed me half, and nodded at the door.

Come home at Easter. I'll save you the heel.
