Sit down, sit, and mind the flour on that stool, it's the only seat in Tanner's that hasn't been sat on by a sack. You want to know how Nell Abernethy found her way to the ovens at four in the morning when the fog on the Ouse was thick as porridge? I'll tell you. She didn't use a lamp. She used the floor.

Set into the boards in front of the bread counter was a brass compass rose, cut by a shipwright called Ezra Fairbrother who rented the room above the shop the winter his boat was laid up. Eight points, black pitch poured into the grooves, and a rope round the rim that he'd tarred himself. Every morning Nell walked it with her toes, north to the proving drawers, east to the flour sacks, south to the back door, and the fog never once had her lost. By then the letters were worn soft, the E gone smooth as a thumbprint.
Then came the morning the flour merchant's boy rolled a barrel straight over the N and rubbed it out. Nell stood in the dark with the dough cooling in her arms and could not for the life of her say which way the river lay. She didn't panic. She knelt, ran her fingers along the rope, and felt the long arm of the star still pointing true under the grime, a dull silver line where the pitch had sunk into the grain. "Well, Ezra," she said, to nobody, "you were a stubborn old goat, and so am I." She scraped the boards clean with a bread knife, found the N again, and drew it back in with a stub of chalk.
The bread went out at six, and the lane smelled of it for an hour after. Ezra's rope is still there under the flour, and the letters are no easier to read, but every apprentice who comes in at four in the dark is made to walk it once, toes first, before they are let near the ovens.
