The ovens were lit by half four, same as always, and I kept the radio off so I could hear the proving dough breathe. You'll laugh, but I've started hanging Dad's old net over the back door, the one with the knotted web and the bead on the bottom. Nell from the wholesale van says it's a dreamcatcher and they're meant to snag the bad ones. I told her the only bad dream in here is a tray of burnt bloomers.

Thing is, the flour gets into everything. Yesterday I found a single grey feather caught in the rack of cooling tins, probably off the pigeons on the loading bay roof, and I kept it the way you'd keep a ticket stub. I pinned it above the bread scale with a drawing pin. Every morning the first light comes up over the car park and the feather catches it, and I stand there with my hands floured and think, go on then, let the good ones through.

Anyway, the loaves came out perfect this morning. Seven dozen cob, ring-scored, golden as a church candle. I saved you the heel of the first one, wrapped in greaseproof, which will be stale by the time the post gets it, so eat it with butter and don't write back complaining.
