Mabel Thorne had kneaded the night into the bread for forty years, and her hands knew the work better than her eyes did. Before the owls gave up on the hedges she would lift the last of the stars from the pump trough and work them through the flour, pressing the dark until it held, because a loaf made without sky would not rise. The oven behind her burned the colour of a marmalade sun, and she had long ago stopped minding the scorch on her wrist.

Her loaves were known in Hollin Dale for their tops. Each one she scored with a knife so the crust opened into a valley, a ring of green, and a dark fringe of pines. The miller's boy, Tobias, once asked why bread needed mountains. She told him that bread was only a small world someone had decided to be kind to.

The trouble came in February, when the sky stopped turning. Mabel's hands grew stiff and the starlight would not sit still in the dough. Tobias brought her a cracked bowl of frost he had gathered from the step, and she understood then that she had been holding the night too tightly, and that it had been splitting at the edges like old glaze.

So she let it go. She baked one last planet, gave it to a stranger sleeping under the bridge, and watched the first grey light climb over the pines. The sun rose orange over the chimney pots. Tobias said the crust had a star pressed into it, though Mabel swore she had not put one there.
