Katana and waves on a calf

Japanese · Calf · Colour · Photo

A katana with a red wrapped handle cuts diagonally up the leg, set against stylised blue waves with white foam and dark outlined crests. Orange and yellow sun or moon shapes sit behind the blade, and the shading uses smooth gradients with bold black outlines. The photograph shows the same calf tattoo from three angles side by side, with the design running the length of the lower leg.

The van is late again, so the first tray is yours to carry. You hear its engine stutter at the back gate while your hands are still deep in the third batch, the dough cool and slack against your wrists, and by the time the driver starts swearing at the bolt you have already dusted the bench and laid out the lames. Your uncle's blade sits on the cloth where it always sits, the wooden grip wrapped in red tape gone dark with flour, the steel thin as a ruler and nearly as long.

Outside the window the car park is still the colour of wet slate. Inside, the ovens breathe orange through their glass doors and throw warm light over the racks, so the room looks like the inside of a loaf. You scale each round, turn it seam side down, and drag the blade across the top in one clean stroke. The cuts open the way foam lifts off a breaking wave, pale and curling at the lip, and you count them under your breath because counting keeps your hands steady.

Mrs Okonedo's lad is fourteen and terrified of the big ovens, and when he finally tumbles through the back door with his hood up, you do not scold him. You hand him the second peel and point at the rack. Together you slide the bread in, the heat rolling over both your faces, while the first grey line of morning lifts over the bins across the road.

When the loaves come out they are the colour of a sunrise held in the palm, gold at the edges and deep amber where the scores split. You set them in a row beside the window. By the time the sun clears the rooftops they have stopped ticking, the lad is eating the heel of one with his eyes shut, and the blade is back in its cloth, waiting for tomorrow's dark.
