My grandmother's mother kept the ovens lit through the winter of the big frost. Each night she went out to the yard in her shawl to check on the flower, a pink thing no bigger than a cupped hand, and each night the green vines had crept a little further up the wall, feeling along the bricks as if they were hunting for a window. The baker across the road called it a sign from God. She called it a weed with ambitions.
On the morning the frost broke, the flower opened before the sun was up, its yellow heart glowing like a coal in the grate. The vines had wound through the vent and down the flue, and every loaf that came out that day smelled faintly of rainwater and sweet seed paste. People queued in the cold for bread they could not explain, and nobody who ate it went hungry again that winter.
So when you take the tray out at four, do it slowly, and do not thank the oven. Thank the yard. Set the first bun on the sill by the drainpipe, where the green is climbing, and leave it there until the light comes up pink.
