The flour comes aboard at Lerwick in sacks that smell of damp string, and by the second night at sea the galley counter is dusted white. You keep the brass scales bolted where the last cook bolted them, the pans gone green at the rims, and you weigh everything twice. The purser checks the tallies against his ledger and never against the sea, so the only honest figures on this ship are the ones you make yourself.

Halvard, the second engineer, comes in after the midnight watch for a heel of bread and a cup of stewed tea. He never takes more than he needs, which is why you notice when a tin of ship's biscuits goes missing from the top shelf, and why you find him at the bulkhead with a pencil, counting marks in neat columns. "Somebody has to keep the account," he says, not looking up, "or it all just goes over the side."

You don't tell the purser. Instead you set the scales on the counter, load one pan with a tin and the other with pennies from your own purse until the beam sits level, and you leave it there for him to find at breakfast. By morning someone has put a biscuit on the far pan, and a line of pencil runs beneath your figure, neat and even.

Nobody mentions it again. The sea gets rougher off Rockall and the galley tilts and every pan slides, but the scales stay where you bolted them, and each night, before the lamps go down, you stand a moment with your palm flat on the counter and feel the weight settle back into balance.
