Four-fifteen, and the owls were still in the elder by the bin store when I unlocked the back door. Three of them, grey as old flour, turning their heads all the way round to watch me carry the sacks in. Mr Hartigan says they only come for the mice that gather at the spilled bran, and he's probably right, but I've started saying good morning to them anyway.

The ovens take an hour to come up to heat, so I have the bench to myself. I knead the first tray of tin loaves while the window goes from black to the colour of weak tea. Yesterday a lad from the chemist asked why we bake in the dark, and I said the dark is when the bread decides what it will be. He laughed. Hartigan didn't. He'd heard me say it before and had decided to let me keep it.
Today a barn owl came in with the first light, pale as the dough, and settled on the sill above the proving drawer. Its face was the shape of a heart cut from paper, and when the sun caught it, the feathers went blue and then gold at the edges, like colour bleeding through a wet tea towel. I didn't move for a full minute. I was afraid the bench would lose its nerve.
Hartigan came through at half six with his coat over his arm and found me still staring. He looked at the empty sill, then at the elder, and said they go to roost once the bakers start, so it's us who have to keep the night now. I wrote that on the back of the order sheet. Tomorrow I'm opening up, and I'll tell the owls first.
