Nobody orders a rose for its centre. They order by colour and stem count and whatever the bride's mother saw in a magazine in 1987. My job on the Thursday before Halloran's wedding was to make two hundred stems look picked that morning, which they had, from a glasshouse outside Tonbridge that smelled of wet soil and diesel. Dad taught me to check the middle first. An open rose is already tired, its petals loose as a skirt left on the floor. A rose still closing has its centre wound tight as a watch spring, and that is the one that lasts through the speeches.

Pim, my apprentice, was sixteen and pricked her thumb on every stem. She wanted to sell the blowsy ones, the ones that looked generous. I took a bloom from the bucket, turned it under the workshop bulb, and showed her how the outer petals were the costume and the heart was the promise. 'Look how it curls,' I said. 'Like it has a secret it hasn't decided to tell.' She rolled her eyes, which is how sixteen says yes.
The wedding was in a barn near Rye with the doors open to the marsh. The groom's grandmother, married in that same barn in 1951, asked me to check the centre of the bloom she would carry. It was still tight. She pressed it to her nose, closed her eyes, and said it was what she had carried herself, back when the petals were not yet afraid of anything.
Pim asked on the drive home whether the old lady had been testing me. I said no, she had been checking whether the flower still had time. We ate chips on the sea wall and watched the tide come in over the flat sand, and I thought about how little anyone can tell from the outside, and how much from the middle.
