The storm reached the ridge just as Mona slid the first tray of dough into the deck oven, and the whole bakery seemed to lean towards the window. Lightning split the sky over the car park, white and then gone, and a moment later the extractor fan coughed and died. The hum of the fridges stopped with it. Mona stood very still with the peel in her hands and counted, the way her father had taught her to count thunder, but the gap closed before she reached four. Something across the valley had been struck.

She found the torch in the drawer under the scales and went round the room touching things: the proof baskets, the sacks of strong white, the cold brass of the dough hook. Nothing had broken. Tomas came in through the back door at ten past five, soaked to the collar, his bike ticking in the yard. He had walked the last mile because the lane was flooding, and he held the lamp out to her like a question.

They lit the oven by hand, one match each, and waited for the gauge to climb. Out on the green, the church spire had taken a bolt and was still throwing sparks onto the wet slates. Mona watched it through the glass until the rain thinned to nothing, then turned back to her bench.

The loaves came out as the sky greyed over the bins. The crust on the first one had blistered in a jagged line where the tin had caught the heat, and she cut three quick slashes across the top before it cooled, the way she always did.
