The ovens were lit at half four and already the cat has claimed the warm end of the proving shelf, tail wrapped round her front paws like the loose end of a ribbon. You'd laugh at me. I've taken to telling her how the dough is behaving, as if she were the foreman. She never argues, which is more than I can say for Mr Pryce from the council, who came in yesterday to complain about the queue reaching the postbox.

Biscuit turned up the week the back yard flooded, soaked to the bone and furious about it. Dad would have shooed her out, but I let her sit by the flour bins, and she has been running the place ever since. She sleeps through the first batch of tins and wakes for the split tops, when the crust cracks and the whole kitchen smells of caramel and salt. Yesterday she knocked a tea towel off the rail with one paw, very deliberately, then looked at me as if I owed her an apology.

Your letter came on Tuesday, the one with the Valparaiso stamp. I read it standing by the back step in my apron with the sky still black over the rooftops. You wrote that the sea is bigger than you imagined and that you miss the smell of the bakery more than you let on. I have kept a heel of this morning's loaf aside for you, though it will be stale by the time the post gets it, so I am sending the recipe instead.

Dawn is coming up grey over the bins now. Biscuit has just padded to the doorway, tail up like a question mark, waiting for me to finish so she can walk the route with me. Save me a seat on the next boat, and tell the sea the cat says hello.
