The flour was still settling when I first saw it. Before four, the bakery on Mill Lane smells of nothing but yeast and cold stone, and I had the lamp pulled low over the bench so I could score the rounds before Mrs Okonedo's van came. My mother taught me the curl, one long stroke that opens a boule like a wave lifting its lip. She said the trick was to let the blade do the work and never fight it.

That morning the deck oven was slow to heat. It ticked and muttered while the dough rose under its cloth, and outside the window the street was grey and empty. Beyond the chimneys, where the sea should have been, there was only the thin pale band that comes before sunrise. My father used to say you learned to read water by its patience, that the swell built under a hull long before anyone on deck could see it coming.

When the first tray came out, I scored the last loaf without looking at the pattern. When I lifted it to the rack, the cut had opened into a perfect curl, edged by the round of the crust, a wave caught inside a bowl of light. I laughed out loud, alone in the kitchen. I had spent twenty years trying to make something that looked like the sea, and it had taken a dark hour and a tired hand.

I sold it at seven to a man who asked for the round one. I warned him about the hot crust, and he held it carefully, as if it might tip out of his palms. Dawn came up over the roofs while I wrapped the offcuts for the gulls, and I went home with flour still in the creases of my knuckles.
