The wasps had found the windfalls again by the time Tamsin reached the bottom row, so she tied her apron tighter and kept her knife moving. Her grandmother's pencil marks were still legible on the masking tape wound around the stock: ANGEL on the left-hand whip, DEVIL on the right, both in the same looping hand that had signed every Christmas card for forty years.

Her cousin Joss leaned on the gate with a flask of tea gone cold. 'You're grafting the sour one again,' he said. 'Nobody wants a devil in their cider.' Tamsin pressed the scion into the split and bound it with raffia. 'Nan said the devil keeps the best wood. You don't get sweetness without something to push against.'

They worked until the light went long and copper over the Wye, and the old tree they had come to save stood split by lightning, the year Albert died. Joss wanted to sell the place. Tamsin had a list of reasons not to, and the wasps were on it.

By October the angel graft had shrivelled to a brown thread. The devil had pushed out three green buds and one stubborn leaf. Joss left the tape where it was, two names on two trunks leaning together over the wall, and in spring the sour apples came in first, bright as coins. He ate one standing in the wet grass and did not make a face.
