The first batch was always in the oven before the milk float had finished its round, and Nan Ferris liked it that way. I'd come in at half past three with my hands still cold from the back step, and she'd already have the dough knocked back on the marble, humming something that might have been a hymn.

Above the proving cabinet she'd pinned a sheet of squared paper covered in pencil. A line ran down the middle, with a ring at the top and a slanting curve beneath it, and little marks hung off the line like washing: a dot for every tray, an arrow where the oven door had to be opened, a small diamond at the bottom where the bell rang. I asked her once what it was. She said it was the morning, drawn out so she wouldn't rush it.

I didn't understand until the Thursday her hip gave way and she sent me in alone. The moon was still a thin paring over the bins, and the sky above the chip shop had gone the colour of weak tea. I worked down her sheet one mark at a time: tray, tray, open the door, wait for the ring of the timer. My loaves came out uneven and too dark on the base, but they rose.

When the sun finally reached the back window, I stood the last tray on the sill to cool and drew a dot in pencil beside the diamond, a small mark for a day I had got through. Nan would want the sheet kept honest. I pinned it up crooked and left the light to find it.
