French fries script in an outlined heart
Fine line · Upper arm · Black and grey · Photo
A single-line heart outline frames the handwritten words french fries in cursive script, with a line underneath the lettering. The linework is thin and even in black ink, with no shading or fill. The design is centred on the inner upper arm against a plain pale background.

The fryer on the Dover night boat had a temperature gauge that lied by about fifteen degrees, so Maurice and I learned to judge the oil by its sound. The hiss went thin when it was ready. Maurice swore it was the only honest thing aboard. We were both from Hull, both hungry at two in the morning, and both fed up with the printed menu, which listed pommes frites in a font nobody could read after a bottle of wine.

Every Thursday a steward called Abigail brought down a chit in pencil, her letters looping off the edge of the paper: french fries, two portions, for the cabin at the end of B deck. Nothing else. No table number, no name. Maurice said it was a code, that someone was courting or the Captain's cook had gone sick. I said it was just a woman who wanted chips and was too proud to say so in French.
I started cutting the potatoes thicker on Thursdays and leaving the skins on. I tucked a folded napkin into the paper cone and drew a small heart on it in biro, one unbroken line, never lifting the pen. Abigail never mentioned it. The chits kept coming for eleven weeks, then stopped on the night the crossing was rough and the galley floor ran with soup.
The next Thursday there was a new chit on the rail, in the same loops and underlined twice: french fries, one portion. Beneath it, smaller, someone had written Tell the cook the heart was crooked. I laughed until Maurice threw a tea towel at my head. I redrew it that night, steadier than before, and pinned it above the fryer where the steam could not reach it.
