You are the first one in, always, before the shutter has finished rattling up. The dough has been waiting in its bowl since midnight and the cold tiles bite through your clogs. Nan's chalkboard still stands by the proving cupboard, and across the top, in her square capitals, it says LOVE NOTHING, the way other shops put up the day's specials.

Nobody ever explained it. Gareth from the bread van asked once, and she told him it was for the customers. He laughed until he had to sit down on a flour sack. You took it for a dare. Then, at fifteen, you watched her hand a split tin loaf to a widower who had buried his wife in March. She held his change in her palm a moment longer than necessary and said nothing at all. She did not love the loaves any less. She simply let them go out of the door.
Today the agent's letter is tucked under the flour scoop. Sold, subject to contract. You knock back the dough, fold it three times, and the bell over the door gives its ordinary tinkle as the first man in work boots pushes through, asking for a cob the way he always does.
You wipe the chalkboard with the heel of your hand and write underneath, smaller: bread, and the names of people who come back. Then you slide the first tray into the oven and listen to the crust begin to talk.
