By ten to five the shutters were still down on Chapel Street and the only light outside came from our kitchen window, where I stood at the marble with a paper cone of dark chocolate and a tray of cooled choux buns that had cost me two hours of sleep to get right.

Dorota watched me pipe my first scroll without saying a word, which was worse than criticism. When she finally spoke it was to take the cone from my hand. "You're pressing. A curl wants lifting, not shoving." She drew a single loop on the parchment, let the tail trail off to nothing, and the chocolate looked as easy as breath. My own attempts came out fat at the start and snapped at the end, like handwriting from a child who had been told to sit still. I tried again, and again, until the tray looked like a row of broken commas.
Then I stopped trying to make them match. I let one vine run off the edge of a bun, let a leaf sit crooked on its stalk, and left a tendril so fine it barely held. Dorota came back from the proving room, lifted the tray, and turned it slowly under the strip light. She didn't say it was good. She said her mother had stamped the old tins with exactly that kind of wandering border, and that nobody had ever complained.
By six the window had gone the colour of weak tea. The first van idled outside with its engine ticking, and the buns sat cooling in their rows, each one trailing black vines like iron gates left open. I picked up the crooked one and put it in the window where the early customers would see it first.
