Ruth had the proving baskets stacked by half past three, and the starter was already sighing in its tub when the power flickered over the back lane. She stood with her wrist in the cold dough and counted under her breath, the way her father had taught her, because the bread would not wait for anyone's nerves.

The old deck oven had a cast iron eagle bolted to its door, head turned sideways, crest fanned out like a hat of feathers. Her father had bought it at an auction in Hull for less than a sack of flour, and he used to say the bird was watching the proof for them. Ruth had never believed him, though she had started talking to it at this hour, when the street outside was empty and the only other light came from the bakery across the road where someone else was up early.

At five the dough was ready and the oven was not. Ruth fed it kindling until the brass handle was too hot to hold, then slid the first tray in, the loaves domed and nervous under her blade. She had meant to cut plain lines, but her hand kept drifting into the curved strokes she saw on the iron bird, a fan of short arcs and then a row of stacked points, the way one feather lies over the next. The bread came out with the crust lifting in layers, each seam flared open like a plume.

At seven the first van stopped in the lane. The driver, a man who had bought from her father for twenty years, turned a loaf over in his hands and laughed softly. "Who did the markings?" he asked. Ruth looked past him to the oven door, where the eagle's eye caught the grey light coming up over the chimneys, and she said that she had only been paying attention.
