The order ticket said one slice, extra pepperoni, and the customer had underlined forever twice in biro, so Rosa Salvo assumed it was a joke and put it in the oven anyway. Thirty-one years behind the counter on Hollins Road had taught her that the strangest orders were the ones worth making. The dough came out pale and blistered at the edges, and the cheese had slid to one corner the way it always did when her nephew Dennis leaned on the counter.

The customer, a thin man in a bobble hat who gave his name as Mr Marrow, wanted the slice bent. He had brought a roll of tin foil and a cardboard hoop cut from a cereal box. Rosa told him she did not bend food. He said everything bends if the oven is warm enough, and she, to her own surprise, took down the long wooden peel and started to work.

They folded the slice into a loop with the crust on the outside and the pepperoni chasing each other round the inner curve. Where the point crossed over, the cheese had gone soft and begun to drip, and Mr Marrow pressed a coin into her palm, said he would be back when it was finished, and walked out into the drizzle without his change.

The next evening the ticket came through the hatch in the same biro, underlined twice, reading one slice, forever. Rosa took the slice from the warmer, bent it round on the foil, and slid it under the lamp, where the cheese began, slowly, to run round the loop and back to where it had started.
