The order came through at twenty to midnight, same as every Thursday since March, scrawled on the carbon pad in Dougie's careful capitals: ONE SLICE, PEPPERONI, EXTRA CHEESE, DRIPPING. Nobody orders a slice. You order a whole pizza, you eat the whole pizza, and you do not ask a takeaway on Hessle Road to make you a loop of dough with no start and no finish.

My nephew Kieran said it was a stunt, so I made it anyway. I rolled the base thin enough to read the bus timetable through it, folded the crust round until the tip met the edge, and slid it onto the back shelf. When I pulled it out the cheese had run down the outline and set in pale ridges, and the pepperoni had sunk into the orange like coins at the bottom of a fountain. It looked like something a sailor would have carved out of bone. Dougie stood at the hatch, grinning, and said, 'That's the one.'

He ate half, wrapped the rest in foil and left it on the windowsill outside, which is how the gulls on our street learned to wait for Thursdays. The following week he asked if I could do it with extra pineapple, and I told him I'd sooner be struck off. He laughed so hard he had to sit on the bench by the bins.

I still have the carbon pad. That ticket never got torn off, and I've never once closed it out on the till. Some orders are meant to stay open, so I bake one every week to prove it, the cheese running down the edge and the gulls queuing at the step like they've paid in advance.
