The chocolate was never meant to be a flavour. Dario Ferri said so every morning while he tipped the cocoa into the copper pan, and every morning his sister Nell, who ran the bakery next door and had no patience for sentiment, told him to stop talking to the pan. He was seventy-one that spring and had been making gelato in Port Maddock since the harbour still smelled of tar. The tub on the shelf was the only one he labelled by hand, in capitals, because his late wife had once asked what he would call the thing that made the queue go quiet.

Trouble came in June in the shape of a developer's man in a grey coat, who pressed his face to the glass of the display case and asked for a taste of everything. Dario gave him a spoon of the lemon, then the pistachio, then the pale hazelnut from the second pan. The man chewed slowly, frowning, the way people do when they are checking a bill. "Where's the chocolate?" he asked finally. "Not on the list," said Dario, and reached for the tub with the capitals on its lid.

The man ate one spoonful standing up, then sat down on the bench outside without seeming to notice he had done it. Nell watched from her doorway with a tray of cooling rolls in her arms. Dario wiped the lid with a cloth and said nothing, which was the closest he ever came to saying anything at all.

By the time the tub was scraped clean, the developer's man had put his grey coat over the back of the bench and was asking Dario how long the parlour had been open. "Long enough to know better," said Dario, and gave him a cup of the chocolate for free.
