Mrs Okonedo had been baking at the bottom of Tanner's Lane since before the church clock was reliable, and she did not hold with fancy talk. When the apprentice, a boy called Piers Gallagher who had come up from Cornwall with one good coat and no sense of time, dropped his third tray of rolls in a week, she did not shout. She took a knife, cut a line into the top of a loaf still raw from the bench, and told him to read it before it went in the oven.

The cut said believe in yourself, the letters running uphill across the crust in a hand so fine it looked like thread. Piers said he could not read that, it was only scratches. She said it was the only sentence she knew that had never once made bread go flat, and that the rest was up to his arms.

He baked. The loaves rose. Each morning after that she cut the same words into the first batch, and each morning they came out of the oven a little browner and a little less like scratches, until by the turn of the winter he could cut them without looking at the board.

In the spring Mrs Okonedo went to the coast to see her sister and left him the keys. At six a woman came in asking whether the bread was ready. Piers wiped his hands, lifted the last loaf from the rack, and wrapped it in brown paper with the words facing up, so she could read them on the walk home.
