You have the ovens lit before the milk float has rattled past the window, and by four the shop smells of scorched sugar and proving dough. The order pinned above the till says one word in marker, ZOO, and under it a boy's birthday cake for Saturday, every animal from his favourite book crowded onto one sponge with no gaps allowed. You laugh when you read it, then go and find the piping bags.

The trouble is the colours. By the time the fox is finished in orange, the green has crusted in its bag and the frog is coming out the colour of a traffic light. You scrape the nozzle, add a drop of blue to the pink so it turns lilac, and pipe a spotted giraffe with a purple neck because there is no other choice. Standing back from the board, with flour dusting the bench and the radio murmuring about the weather, you decide the giraffe is the best thing you have made all week.
Dawn comes up grey over the bins, then gold along the kerb. The baker from the flat upstairs knocks on the back door for his usual loaf, sees the tray of crowded, impossible animals and says nothing for a long time. When he finally speaks he asks which one is the fish. You point to the small blue one swimming through the pink and tell him it's still wet, so he should wait.
