The starter had gone flat again by the time Nell unlocked the back door at half past three, a grey skin on its surface and a sour smell that meant it wanted feeding. She weighed flour onto the steel table in the dark, the strip light buzzing over the proving racks, and worked water into it with the flat of her hand until it stopped fighting her.

The dough came out of the bowl in one long pale rope. She shaped it the way Ruth had taught her, folding each edge into the centre and turning the ball against the bench until the skin tightened like a drum. Ruth had been dead four years, but her tins still sat on the top shelf, dented at the corners, and nobody had ever had the nerve to move them.

By five the oven was roaring. Nell scored the bloomers with a razor, quick short cuts that opened into diamonds and crosses across the crust, and the loaves came out freckled with dark pricks where the flour had caught. She laid them on the cooling rack in a long curving line, and it looked, she thought, like something that had crawled out of the oven to warm itself.

Outside, the sky over the car park went from black to the colour of weak tea. The last sliver of moon hung low above the bins. Nell broke the heel off the first loaf, still too hot to hold, and listened to the crust crackle. The sun would be up within the hour, the shutters would rattle up on the High Street, and somebody would buy the bread without a thought for the dark it had been made in. She tore the heel in two and ate it standing up.
