The flour is still warm in the bowl when you lift the cloth, and the kitchen smells of yeast and the cold that creeps in under the back door. Nobody else is up. The ovens tick as they heat, and through the yard gate the black spine of the spruce on the hill stands against a sky that hasn't yet decided whether it is night.

Mrs Ackroyd planted that tree the spring she bought the bakery, a whip no taller than the proving drawers. Forty years on it has outgrown the chimney and the power lines, and the parish council has written twice about it. She never answered those letters. She would stand in the yard in her wellingtons with a flask of tea and tell you the tree knew the time better than any clock in the shop.

Today the letter came with a date on it. You read it twice while the first trays go in and the loaves start to colour gold in the heat. You think about the branches, tier upon tier, each one reaching a little further than the one below to catch whatever light the morning brings. Nobody has ever asked the tree to stop growing.

When the sky over the ridge turns the colour of weak milk, you carry the first loaf out to the yard and set it on the old wall. You stand under the trunk and wait. The top catches the light before anything else does, and for a moment the whole tree burns like a candle. You tear the bread in two and eat your half facing it, the crust still breaking, and you tell the tree the date can wait.
