Tamsin had the oven door open before the timer went, because the bread never waited for anybody's good intentions. Ivo sat on the upturned flour crate by the proving rack, a blade in one hand and a boule in the other, scoring the top of each loaf with the careful little strokes his mother had taught him on Sunday mornings. He was not sure the pattern was right. He never was. The shutter behind the counter was still grey, and the street outside held only the milk float's rattle and one fox crossing the car park with its tail low.

He began with a small circle at the centre, then ringed it with petals, each one overlapping the last the way the painted lotus on the old tin tray did. His wrist kept sliding. The petals came out crooked on the first two loaves and he swore softly, and Tamsin, without turning round, said that crooked was what made the rise honest. He laughed, though he didn't believe her. He scored the third loaf slowly, the way his mother had, and didn't look up until the blade was lifted clean.
In the oven the dough did what it always did. The seams split open along the lines he had cut, and the centre bloomed outward in layers, pale gold rising over darker gold, the outer petals curling up like the edges of paper left out in sun. Tamsin slid the peel under the tray and carried it to the rack with both hands.
When the light finally came orange through the shutter, it fell across the cooling loaves, and for a moment the whole bench looked like a flower someone had painted on the morning and then left for them to find.
