The lad from head office came in on a Tuesday with a laminated sheet about something called a grain bowl, and Dot Pargeter put the kettle on before he'd finished his first sentence. She had run the Wayside Café for thirty-one years, and in all that time nobody had ordered a grain anything. She poured him a mug of tea strong enough to stand a spoon in, set it on the counter, and told him breakfast was the only meal that had never once let anybody down.

He was not impressed. He asked whether the eggs could be poached in a jar. Dot fried two over easy on the big black pan, laid four rashers beside them so they curled and crackled, and took the waffle iron down from its hook, the one with the scorch mark shaped like Ireland. The sausages went in last. The oranges she cut into quarters with the serrated knife, because a slice thin enough to see through was no use to anybody with a sore head.
By the time the coffee pot had gurgled its last, the lad had stopped checking his phone. He ate everything, mopped the yolk with the corner of a waffle, and asked with his mouth full why the café had kept the old sign under the window. Dot reached for the red mug with the number one painted on it, the one her husband had won at the village fete in 1987 for being the worst darts player in the county, and poured him a second cup.
'Because folk come in at six in the morning needing one thing to be the same,' she said. 'Change the menu all you like, love. Just leave the eggs alone.' He left a tip under the saucer. The following Monday the grain bowls were nowhere to be seen, and the waffle iron was back on its hook, still ticking as it cooled.
