Mo Okafor had been scrubbing the same steel prep table since the Lisbon run, and the chief steward had stopped asking why. The galley of the cargo ship Brannock Lass was eleven feet by nine, hot as a bread oven, and it smelled of onions and bleach. Nobody aboard thought of it as a place to love. Mo did.

He had learned his knife work from a cook called Vera Dunmore, who had worked the galleys of three ferries before her hands gave out. She had a habit of writing on the back of order slips while the stock simmered, phrases she'd heard from passengers or read on the sides of tins. Most were rubbish. One she pinned above the range with a drawing pin: Do what you love. Love what you do. She had written it in a looping hand that ran uphill across the slip, the letters leaning as if they were trying to climb out of the paper.
The week Vera died, Mo found a second slip folded inside the flour bin, in the same hand. He read it twice under the caged bulb, then unpinned the old one and put the new one in its place. The chief came in, saw it, and grunted that the wall was for the health inspector, not poetry.
Mo kept cooking. He made the soup thicker and the bread darker, and every morning he wiped the prep table until it shone, the way Vera had taught him, because doing it properly was the part he could love. When the ship docked at Tyne, the chief took the slip down himself and read it aloud in a voice that was not quite steady. Then he pinned it back up and told Mo the stock needed watching.
