Infinity symbol on the wrist

Fine line · Other · Black and grey · Photo

A close photograph of a wrist with a small infinity symbol tattooed on it, formed from two interlocking loops. The linework is thin, even and solid black, with no shading. The photo is greyscale, and a dark chain bracelet with large faceted crystal stones sits beside the tattoo against a softly blurred background.

You reach the bakery at twenty to four, before the lamps on Mill Lane have gone off, and the flour is already hanging in the air like the first snow of the year. Your hands know the order of things: scale the water, tip the levain into the bowl, fold the dough four times while the kettle ticks as it cools. Nobody else is up. The radio on the shelf murmurs about ferry cancellations and the price of diesel.

The loaves you shape this morning are the ones your aunt Nell shaped for forty years, and she always said the trick was to keep going round. Fold, rest, turn, fold. You press a figure of eight into the bench with two fingers, then drag the rolling pin once along it so the lines double back on themselves. She called it the knot. You never knew whether she meant the dough or the morning.

At half past five the first van pulls up outside and the driver raps the glass with his ring. You hand him a tray of crusts that didn't rise, and he asks whether the starter's still alive. It is. You lift the jar from its shelf and the top has split and bubbled and is breathing sour sweetness into the room, the way it did the week Nell went into hospital and you stood here feeding it for her.

You slide the first batch into the oven and watch the window fog. Past the glass the sky is turning the colour of weak tea. You feed the starter a spoon of flour and a spoon of water, cover it, write the date on a strip of masking tape, then leave room beneath it for tomorrow. That is how you keep it going.
