The oven door is still ticking when you reach for the first tray, and the street outside is the colour of wet slate. You have been up since half past two, which is when Mr Abadía used to come down the back stairs rubbing flour into his knuckles and tell you that bread does not care whether you are tired.

He had a looping hand, the kind that made even the delivery notes look like invitations. Every morning he scored a single J into the top of the batch loaves with a razor, a long swoop that trailed off into a tail, and he never let anyone else do it. "The customer reads the signature before the crust," he said. You thought it was vanity until the winter he went into hospital in Bradford and the shop sat cold for three days.

On the fourth morning you came in alone, lit the ovens yourself and found his razor on the cooling rack, wrapped in a tea towel with your name written on the corner in pencil. Inside the towel was a note in that same looping hand: the first loaf is always the one you are brave enough to sign.

So you do it now, with the dough still cool and the blade cold in your fingers. The J comes out crooked, then less crooked, and the tail drops away just as he showed you. When the sun finally clears the car park roofs, you set the loaf in the window, and somewhere on the high street a stranger stops, reads the mark on the crust, and walks on with it under their arm.
