The flour sacks are stacked by the back door and the oven has been running since four, so the kitchen is warm enough that you have stopped noticing the cold coming off the yard. Marguerite has gone home early with a fever, leaving you a list in her looping hand and a cat you have never once seen move from the windowsill. The cat is called Biscuit, or so the chalk on the bin says, and it sits exactly as it did the day you arrived, tail wrapped round its paws, watching the street as if it were waiting for a bus.

At half past five the first van rattles up the hill and you start the tray of morning rolls. Your hands know the work now: the knead, the rest, the slap of dough on the marble. You keep glancing at the cat, which keeps not looking at you. Somewhere in the second batch you realise it has turned its head, the way it did when the bell over the door first rang and you were too nervous to ask for the job.

When the shutter goes up at six, the cat stands, stretches, and walks straight through the open door into the grey street. You run after it with a warm loaf still in your hands, but the lane is empty except for a single line of prints in the frost, heading towards the river. You stand there until the loaf cools and the bell rings again, and it is Marguerite, pale and grinning, holding a tin of fish and asking whether you have burned anything.
