The oven had been on for twenty minutes before the triangle came in through the back door, which was locked, and settled on my proving baskets as if it paid rent on them. It had one eye, a blue bow tie the colour of a gas flame, and a pair of white arms folded across its middle.

'You're kneading the same loaf again,' it said. 'Every morning, the same loaf. Do you never wonder what's underneath?' I told it the floor was underneath, and the floor was sticky with yesterday's glaze. It laughed, and the flour lifted off the bench in little blue sparks that didn't land anywhere.

'Reality is an illusion,' it said, tapping the nearest cob with one white finger. 'The universe is a hologram. Your bread is a hologram. Rising is only a suggestion.' It pressed its thumb into the crust and left a neat blue eye behind. My sourdough, which had never once risen to my satisfaction, swelled so fast the lid of the banneton popped off and rolled under the till.

By six the queue ran round the corner and back again, and everyone wanted the cob with the eye in it. The triangle was gone. Only the bow tie was left, folded on the flour sack, and when I lifted it the cloth was warm as a tin fresh from the oven. I still have the loaf with the eye in its crust. I won't cut it.
