Every morning before the church bell, Agnes Peel lit the ovens in the bakehouse at the bottom of Chapel Lane, and every morning two swifts came down the chimney to see whether she had burned anything yet. They were a pair, the grey one with the torn tail and the one with a white throat, and she had given up shooing them years before.

One winter the grey one stopped coming. Agnes kept the dough rising anyway, slapping it onto the board in the dark while the window went from black to slate. She shaped the loaves the way her mother had taught her, with a knot pinched at the top like a heart pulled tight, and she set the first one on the sill for the bird that did not come.
The white-throated swift came down alone on the third morning. It hopped along the flour bin, looked at the sill, then looked at her, and pecked a crumb from the loaf she had set aside. Agnes understood then that the bird had been waiting for her to stop pretending she was not waiting too.
She sold the bread at seven, as usual. When the baker's boy asked why she had pressed poppy seeds in a ring around every heart-shaped crust, she told him the birds needed something to count while they were gone. He laughed. She did not, and the next morning she pressed one more seed than the day before.
