Crab with mandala body in colour

Neo-trad · Other · Colour · Photo

A crab design has a large mandala-style flower forming its body, shaded in brown, peach and blue. Its legs and claws are blue and purple with white dot highlights. Bold dark outlines and smooth colour fills define the design, which sits on a limb against a dark fabric and a light patterned background.

The oven timer had been wrong for a week, so I was up at ten to four, sleeves rolled, when the crab came in under the back door. It was the size of a dinner plate and the colour of a bruise at dusk, its shell a great brown rosette of petals that rose and fell as it breathed. Nobody had warned me crabs could climb a step.

Mrs Okonedo, who ran the ovens before me, used to say the sea was just a bakery that had forgotten its recipe. I never believed her. But the crab went straight for the proving drawer where the rye was resting, picked its way between the trays with one blue claw held high like a sceptic's finger, and settled beside the flour bin as if it had paid rent there for years. I poured it a saucer of water. It tapped the rim twice with a purple pincer and waited.

By five the window had gone the grey of cold dough. I shaped the first batch and scored each loaf with the lame, and the crab watched every cut without blinking. When I finished the round boule with the seeded spiral, it reached out and laid one leg across the top, claw to claw, the way you might bless a child. Then it walked out through the gap under the door, where the bins were beginning to rattle.

The loaf was still warm when the first van pulled up. I left it on the counter with a note in my roughest capitals: FOR THE DEEP ONE, ONE FARTHING. Next morning the saucer was empty and the crust had a neat slit no knife had made, with a single sprig of sea holly tucked inside. The flour bin has been dry ever since, and I have stopped asking what it was paying me in.
