The dough had been rising since two and I was already behind on it. The proving cupboard hummed in the corner of the back room, and I stood in front of it with flour to my elbows, trying to remember whether the batch for the market stall had gone in at quarter past or half past. Maureen's card was still taped to the cupboard door, curling at one corner. She had written it in biro the winter she taught me to score a loaf, the words slanting and joined together like she had no time to lift the pen. Inhale confidence, exhale doubt. For a month she had made me say it aloud while the lame went through the dough, breathe out on the cut, and I had thought it was the kind of nonsense people put on tea towels. Then she had a fall on the stairs at her flat and the shop was suddenly mine to open.

This morning my hands would not stop shaking. I pulled the trays out too fast and a baguette slid sideways across the bench. I stood there with the oven breathing heat against my shins and felt the old panic rise, the same one that had kept me awake all week. So I did what she had made me do. I breathed in, long and slow, the flour dust catching in my throat, and then I took the blade and cut each loaf with one clean breath out.

The crusts opened along the lines like they had been waiting to. By the time the first sack of rolls was bagged, the window over the sink had gone the colour of weak milk. I pulled a fresh slip of card from the drawer, copied her words in my own untidy hand, and stuck it beside hers before unlocking the shutters.
