Traditional · Other · Colour · Photo

A slice of pizza with pepperoni discs and cheese dripping down its edge is outlined in bold black linework. The words Stay Cheesy sit in an arc above the slice in blue and red lettering. The crust and cheese use yellow, orange and brown shading against the skin, with the design filling the centre of the frame on a dark background.

Mrs Dorothea Pirie had run the Bella Napoli on Cutler Street for thirty-one years, and in all that time she had never said goodnight to a customer without the words she'd had painted above the oven in 1994. The sign had faded to the colour of weak tea. Nobody on the estate remembered who first called it a joke, only that it stuck, the way cheese sticks to the roof of a mouth.

Her grandson Kieran had come home from Leeds that spring with a plan to modernise. Sourdough, he said. Oat milk, a menu on a tablet. On the last Friday of May he stood in the back with a tub of mozzarella going soft in the heat and announced the sign had to go. Dorothea wiped her hands on her apron and reached for the biscuit tin under the till, the one holding ancient order pads and a cassette of Pavarotti with no case.

"Your grandad," she said, "ate a slice of my pepperoni every night for four months before he asked me out. Four months. He said it was the only thing on the menu that made sense."

Kieran opened his mouth to argue. The bell over the door rang. A man in a high-vis jacket stood there dripping from the rain, asking whether the cheesy garlic bread deal was still on.

Dorothea smiled at him over the counter. "We're open, love. Stay cheesy."
