Five past four, and the only red light in the bakery is the oven clock, which you have stopped trusting. The christening order for Mrs Okonedo is still a tray of dough that refuses to rise, and Ferdi, the night lad, has tied a bunch of seaside prizes to the proving rack to keep himself awake. There is a yellow mouse with a zigzag tail, an orange lizard with a flame on the end of it, a green toad with a bulb on its back, a blue turtle, and a pink thing nobody can name.

The strings run down from the mouse like the spokes of an umbrella, and each time the back door sighs open the draught turns the whole cluster so the toys knock together and the turtle ends up upside down. Ferdi says it is bad luck to cut them loose before the first loaf comes out. You tell him bad luck is baking a christening cake with no eggs in the house. He laughs, then goes quiet, because his sister was meant to be the one lighting candles today, and she is still in the hospital in Leeds.

You work the dough by feel, folding it the way your father taught you, saying nothing. The windows go from black to the colour of weak tea. At half five you slide the first tray into the oven and the smell fills the back room, and the strings sway in the heat, the lizard's flame brushing the toad's bulb, the whole chain swinging like a plumb line that nobody has told where to settle.

When the cake comes out at six, you cut Ferdi a corner piece with the ribbons still on the rack behind him. He wraps the toys in tissue, one by one, and posts them through the hospital letterbox with a card that says only, Hold the string.
