Dear Mr Greaves, The third time the tray came back from the cooling rack with a skull sitting on top of a cupcake, I stopped blaming the humidity. You will say I have been too long in a cellar with the oven on, and perhaps you are right. But the skull was grey as cocoa crust, polished at the brow, and it wept red down the paper cases as if somebody had left the tap running inside it.

It was not my recipe. My recipe is Victoria sponge, a wet cloth over the bowl, and no nonsense. The frosting that morning was a smooth milk chocolate buttercream, piped in one swirl the way Nan taught me, and I had never once set a spoon of raspberry coulis near it. Yet there it was, dripping over the frosting and pooling on the tray like a spilt wine glass. Mrs Haworth came in for her order at noon and said it was perfect. She asked if I could do one for the wake on Thursday. She wanted it sealed in a box, she said, so nobody would be tempted to touch the skull.

I took the lot to the canal at closing and tipped it in. I watched the red ribbon spread across the water until the ducks scattered. The next morning, on the flour shelf above the sink, sat one more cupcake, cold and perfect, with a fresh drip running off its skull and a little bead of red on the lip of the case. I have enclosed the recipe. You may keep the skull. I am giving up the sponge.
