Dear Nan, the oven's up to temperature and the cat has taken her usual place on the flour sacks, one ear turned to the back door as if she expects a rival baker. Mr Pidgeon's tins are still cooling. I'm writing this on the back of a delivery docket because the till roll ran out at four.

You'd laugh at the state of her. She's black on one side and white on the other, with a smudge over the left eye like she's been dipped in soot and then thought better of it. The lads from the dairy call her Highwayman. Every morning she sits on the cooling rack and watches me knead, head tipped, judging the dough the way you used to judge my hemlines.

Yesterday a woman came in for a bloomer and stood staring at the cat so long the queue backed up to the door. She said the cat looked like a lodger she'd once known in Cardiff, one who never paid rent and never once apologised. I gave her the loaf free and the cat got the crust.

The grey is coming up over the chimneys now, and the first van is idling outside. The cat has jumped down and is walking the length of the counter, leaving small paw prints in the flour. I've decided to leave them until the shop opens. Some things should be seen by customers before anyone sweeps them away.
