Today it is the Sunday cobs, a dozen of them, and your blade has gone blunt. Rummaging in the drawer under the scales, you find the old lame Dennis left behind when he moved to Cornwall. You try a single stroke across the first dough ball and it skids, tearing the skin. So you slow down and let the dough take the cut. You draw a loop that turns back on itself, then another, and the ragged crosses of your first weeks give way to one thin unbroken line that never lifts from the surface. Inside the left lobe, you press the very tip of the blade into the crust and make a small heart.

Mrs Okafor comes through at five with her cardigan buttoned wrong. She sees the tray, says nothing, and then tears one open. Steam rolls out over the counter and she laughs once, quietly. "Who taught you that?" "Nobody," you say. "I just didn't lift."

By seven the van is loaded and the first grey light is coming through the shop window. You picture a stranger's knife going through one of those loaves by noon, following your loop without knowing it was ever a loop at all, and the little heart breaking open on someone's breakfast plate.
