Hold the peel steady, lad, or the loaves go in crooked and come out like sad hats. Aye, I'll tell it while they bake. Listen with your hands, the dough learns more that way than from any tale. When this oven was my mother's, she burned three woods in it and no others. Pine from the top of Cold Hill, which roared and spat and had the whole street awake before the bread was. Birch from the copse by the sheep gate, which gave a steady, honest heat. And the ash from the lane, bare as a broom in February, which the carter swore was dead wood and not worth the splitting.

My mother split it anyway. Every Tuesday, before the light, she dragged a length of that ash in from the yard and laid it at the back of the firebox, where it smoked and sulked for an hour before it caught. By then the pine was gone and the birch was half to embers, and the ash took over, slow and red, keeping the crusts from scorching while the middle rose. Nobody in Stow Ferrar thought the grey stick earned its keep. They ate the bread all the same, and came back for more.

Tuesdays are still ash days, so mind the back of the oven. Pull the loaves now, one at a time, and knock the bottoms with your knuckle. Hollow means done. Save the back one for last, it'll ring like a bell.
