Mr Okafor from the flat above swears the little cat comes in through the extractor vent at this hour, but I have never caught her, only the pawprints across the proving tins and, once, a purple ribbon hanging off the cooling rack like a bookmark.

Whatever she is, she has opinions. Yesterday she rearranged the dark rye so the loaves stood in a neat row like a choir, then sat on the windowsill in her spotted purple frock, horns tidy, tail held out like a tiny pitchfork, and watched me count the till as if I owed her money. I told her the bakery was not a charity. She licked one paw and looked at the cinnamon knots instead, which is how I knew she had already decided.

So this morning I left a tray of knots on the bench with a note tucked under the edge: For whoever keeps my starter alive. Half of them were gone by six. The note had been turned over, and on the back, in careful pencil, someone had written, Your flour is too wet and your sourdough is too sad. Fix the rye. Keep the change.

I have stopped locking the back door. The ribbon is still on the rack, and the rye has never risen so high.
