Four fifteen, and the ovens have been breathing since three. Mabel Cuthbert's cat has taken up residence on the flour sacks again, a grey heap with a green bow tie somebody tied on her for the Christmas order, and she will not be moved. Dev says she is bad for hygiene. I say she is the only one of us who has been properly asleep all night.

The sourdough is my job this morning. Forty loaves, scored and cold-proofed, and the tray of Chelsea buns that Mabel swears by. Sheila's boy brought in the wholemeal before we'd even turned the lights on, and he left a crumpled sheet of temporary tattoos on the counter, paws and fish and mice, with CATURDAY printed across the top in fat, cheerful letters. He said his mum bought them for a joke. Dev stuck one on his wrist, pulled a face, and now he's wearing a little teal mouse on his thumb like a man who has lost a bet.

I peeled a mouse off the sheet and pressed it to the back of my hand, the way you'd test a bit of paint. It came away after the first wash, pale and faintly soapy. Mabel would like that. She says nothing lasts in a bakery but the smell.

At five the sky over the car park goes the colour of weak tea. Tuesday stretches, pads down the sacks, and sits at the back door staring into the dark as if she has ordered it. I let her out. She comes back twenty minutes later with a dead moth and a look of enormous satisfaction, and I think, well, that's Caturday for you.
